Third times the charm?
I BURNT IT AGAIN.
Not awfully, but still.
1. Cake: High temperature [365] for first 15 minutes, and then drop it to 350 for the last 20-25 minutes or so, until done.
2. NO WATER ANYWHERE, ESPECIALLY NOT IN THE EGG WHITES
3. Wait to beat the egg whites. Don't beat them twice
Coffee cake with a pecan, chocolate chip, cinnamon crumble topping
I somehow got water into the egg whites so I was super, super worried about the cake going in. IT WAS A GLOPPY MESS, and then it REFUSED to bake all the way, which is mostly why it ended up a bit burnt.
BUT IT ACTUALLY TASTED REALLY GREAT, so I'm very thankful!!
(see the slightly denser middle. Though the use of cake flour in place of all-purpose and the fact that the recipe had 4 tsp of baking powder probably kept it from being super dense)
But it was moist and the topping was lovely :9

[Cut the sugar (1-cake, 1/2-topping) and butter (1.5-cake, .5-topping), cut the cinnamon in the topping (1Tbsp) and added 1/3 cup of mildly sweet chocolate chips. I also forgot the flour in the topping. idk how much that affects it......]
